Easy peasy couscous salad recipe

Hey guys these are just a few quick and easy low fat recipes to have as a snack or as a side with your dinner, inspired by some of my friends who are looking for ideas to eat healthily.

Couscous salad (this can be served hot or cold, I prefer cold)

What you will need . . .

– 250g couscous
– 200ml boiling water
– vegetable stock cube
– small knob of butter
– chickpeas
– peppers
– 1tsp pesto
– 1 carrot grated
– spring onion

What you need to do . . .

1. Weigh out your couscous and place in a bowl
2. Dissolve the vegetable stock cube in the boiling water and pour over the couscous (it should cover it)
3. Give a quick stir and cover the bowl with cling film
4. Leave the couscous to soak up all the liquid while you prepare the other ingredients
5. Cut your peppers into small pieces
6. Grate the carrot
7. Drain and rinse the chickpeas
8. Cut up the spring onion
9. Once the couscous has soaked up all the liquid remove the cling film and fluff it up with your fork so it’s not solid any more and looks grainy
10. Add in a small knob of butter, season with salt and pepper and add a teaspoon of pesto (if you don’t like pesto don’t worry it’s not a strong flavour and you can’t really taste it, it just adds to the overall flavour)
11. Mix together until the butter has melted and add the rest of your ingredients and mix until it is all combined
12. Leave for about 30 minutes until cool and the flavours have all settled and serve
I love this just on its own, with a salad or as a side with your meal and like I said can either be served hot or cold. *store in the fridge, will last a out a week if well covered or in an airtight tub
