Beef and Tomato Stew

This recipe is one of my favourites, so easy to do and Slimming World friendly, I like to serve mine with wild rice, but you can also serve it with potatoes, mashed or jacket.


*500g beef chunks (I use stewing steak)

*1- 2 tbsp tomato puree

* 1tsp sugar/sweetener

*3-4 cloves of garlic

*1 pint of beef stock (this can come from a stock cube)

* 2 peppers chopped

*mushrooms (as many as you like)

*1 large onion

*salt and pepper


*First off preheat your oven to 160oC

1 – In a large pot brown and seal the meat.

2 – Add in everything else, it doesn’t matter what order

3 – Mix together and transfer to an ovenproof casserole dish

4 – Cover the casserole dish with tinfoil and cook for 2 and a half – 3hours until the meat is tender and falling apart
