
I decided to go for a veggie meal to break up the week, there’s only so much chicken you can eat. This recipe I found online and it was really quick and easy to make. I made a few tweaks to the recipe by roasting my Cauliflower in the oven instead of boiling it and by cooking my onion, garlic, ginger and spices first.

It was really filling and actually really cheap to make and would even be nice as a side dish if you wanted to have a meat curry with it.
